CLASSIC CHICKEN SOUP

Ingredients:
1½ lb | Chicken Breasts, boneless and skinless |
2 cup | Pasta, uncooked |
5 | Carrots, peeled and chopped |
1 | Yellow Onion, chopped |
4 stalks | Celery, chopped |
4 cloves | Garlic, minced |
3 tsp | Extra Virgin Olive Oil |
6 cup | Chicken Broth |
1 cup | Water |
¾ tsp | Dried Thyme |
½ tsp | Dried Rosemary, crushed |
¼ cup | Chopped Fresh Parsley |
1 Tbsp | Fresh Lemon Juice |
Salt & Pepper |
Directions:
Add the chicken, onion, carrots, celery and garlic to the crockpot. Drizzle with oil and pour in the chicken broth and water. Add the thyme and rosemary and season well. Mix everything well and cook on low for 6 hours. Remove the chicken and chop it into small pieces. Add pasta to the crockpot and cook until tender, about 10 minutes. Pour in the lemon juice and replace the chicken. Mix everything to combine and serve.
