Brown Rice Citrus Salad
1 cup brown and wild rice
1/2 cup dried cranberries
3/4 cup pecans, toasted and chopped
2 green onions, sliced thin
2 tablespoons apple cider vinegar
2 tablespoons extra-virgin olive oil
2 tablespoons honey
2 tablespoons fresh orange juice
3/4 teaspoon orange zest
Fresh cracked pepper, to taste
Pinch of salt
Cook rice as per directions and cool in refrigerator. Combine liquid and pour over rice. Add rest of ingredients and chill. Can serve chilled or at room temperature. Will keep for several days.
