Tuscan Chicken Soup

Cooking Light-One Dish Meals

1 cup chopped onion

2 tablespoons tomato paste

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 15 oz can cannelloni beans, rinsed and drained

1 14 oz can fat-free, less-sodium chicken broth

1 7 oz bottle roasted red bell peppers, rinsed, drained, and cut into 1/2 inch pieces

1 pound skinless, boneless chicken thighs cut into 1 inch pieces

3 garlic cloves, minced

1/2 teaspoon chopped fresh rosemary

1- 6 oz package fresh baby spinach

8 teaspoons grated parmesan cheese

 

Combine first 9 ingredients in an electric slow cooker.  Cover and cook on high 1 hour; reduce heat to low, and cook an additional 3 hours.  Stir in rosemary and spinach, cook on LOW 10 minutes.  Ladle 1 1/2 cups soup into each of 4 shallow bowls; top each with 2 teaspoons Parmesan cheese.  Yield: 4 servings.
