CREOLE FRUITED RICE SALAD
Try this Creole twist with a unique fruit and rice salad at your next barbecue, picnic or potluck. Start with Zatarain's Jambalaya Mix and top it off with apples, oranges, grapes and honey – sweet and savory in 25 minutes.
Serves: 8
Serving Size: 3/4 cup
2 1/2 cups water
1 tablespoon oil
1 package ZATARAIN'S® Jambalaya Mix, Original
1/4 cup poppy seed dressing
2 tablespoons chopped parsley
2 tablespoons orange juice
1 tablespoon honey
1 can (11 ounces) mandarin oranges, drained
1 cup red grape halves Substitutions
1 apple, such as Red Delicious or Gala, cored and cut into chunks
1/4 cup sliced celery
15 mins Prep time
25 mins Cook time
Bring water and oil to boil in medium saucepan. Stir in Jambalaya Mix; return to boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender. Remove from heat. Let stand 5 minutes.
Spoon rice mixture into large bowl. Cool to room temperature. Fluff with fork.
Meanwhile, mix poppy seed dressing, parsley, orange juice and honey in small bowl. Add fruit and celery to rice mixture; toss gently until mixed. Drizzle dressing over salad; toss gently. Serve immediately. Or, cover and refrigerate until ready to serve.
