Seafood and Corn Chowder
3 tbsp. butter
1 medium onion, diced
3 tbsp. flour
6 cups low-sodium chicken broth
2 medium potatoes, peeled and diced
1/2 cup heavy cream
1 ½ cups frozen corn
½ lb. shirp, peeled and deveined
1 (6-oz) salmoon fillet, cut into chunks
juice of ½ lemon
2 tbsp fresh parsley
1. In a large pot melt butter over medium-high heat. Add onion;
cook until translucent. Add flour, cook and stir 3 minutes ot until
light golden.
2. Add broth, whisking constandtly to combine. Stir in potatoes:
simmer 10 minutes or until tender.
3. Stir in heavy cream and corn; simmer 5 minutes. Add shrimp and
salmon; simmer 5 minutes or until shrimp and salmon are cooked
through.
4. Stir in lemon juice and season with salt and pepper to taste
sprinkle with chopped parsley and serve
