Makes 4 servings.
1 cup canned pineapple chunks unsweetened, drained
1 cup canned mandarin orange slices unsweetened, drained
1 cup plain lowfat yogurt
1/4 tsp coconut extract
2 tsp shredded coconut, unsweetened
1 tsp vanilla extract
sweetener equivalent to 5 tsp sugar
Combine all ingredients and toss to mix well. Chill to blend flavors.
