GRANNY SMITH SWEET POTATO SOUP
3 1/2 qt)
2-3 slices bacon, roughly chopped
1 med. onion, roughly chopped
1 large chopped carrot
1/2 c. roughly chopped celery
1 shallot, finely chopped
1 1/2 tsp. finely chopped garlic
1 Granny Smith apple, peeled, cored, chopped
2 1/2 lb. sweet potatoes, peeled, diced
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/4 tsp. dried thyme
1/2 c. flour
2 qt. chicken stock
1 c. heavy cream
1/8 tsp. salt or to taste
1/8 tsp. pepper or more to taste
1/4 tsp. hot pepper sauce or to taste
8 oz. sour cream
Thyme sprigs for garnish
Saute bacon in a large stockpot until crisp. Remove bacon. Add next 7 to drippings and saute 4-5 min., stirring occasionally. Add next 4 and stir until flour is well mixed. Add broth and bring to a boil, stirring occasionally. Reduce heat to low. Simmer 15-20 min. until all ingredients are soft. Puree. Stir in cream over low heat. Season. Serve in bowls garnished with sour cream, bacon and thyme sprigs.
