Green Bean and Feta Salad
8 oz. green beans
3 Tbsp. vinegar, preferably red wine (Jodi would use Balsamic)
2 Tbsp. oil, preferably olive
1/8 tsp. salt
1/8 tsp. pepper
1 can (8 oz) sliced beets, drained
3/4 cup canned chick peas drained and rinsed
1/3 cup chopped fresh mint
1 oz. crumbled feta cheese, about 1/4 cup
Over high heat bring pot of salted water to boil. Add green beans; cook until just tender, about 2 minutes. Drain; rinse under cold water until cool, about 1 minute. In serving bowl whisk together vinegar, oil, salt and pepper. Add beets, chick peas, mint, and reserved beans; toss to coat vegetables with dressing. Sprinkle with feta cheese; serve.
Makes 4 servings.
