Christmas Zucchini Salad
Colorful and healthy. Can be made up to 3 days in advance.
10 Servings
3 large Celery; ribs, chopped | 2 cloves Garlic; crushed |
1 large Green pepper; chopped | 1 1/2 teaspoon Parsley; dried |
4 medium Zucchini; unpeeled, chopped | 1 teaspoon Sea salt |
4 Green onion; chopped | 1/4 teaspoon Pepper |
3/4 cup Wine vinegar | Cherry tomatoes; optional |
3/4 cup Extra Virgin Olive Oil |
Combine vegetables and marinade in a tupperware bowl or bowl with a tight fitting lid. Marinade overnight or until ready to serve, turning bowl over from time to time. Place drained salad in glass bowl and garnish with: red cherry tomatoes.
