Chicken Pasta Salad Recipe
Served warm, this satisfying salad combines pasta, chicken, lettuce, mandarin oranges and romaine and is tossed with a slightly tart dressing. From Coos Bay, Oregon, Diane Conrad comments, "My daughter-in-law gave me a basic dressing recipe, and I adapted it to suit our tastes."

Ingredients
2 tablespoons cider vinegar
2 tablespoons reduced-sodium soy sauce
4-1/2 teaspoons olive oil, divided
1 tablespoon sugar
1 garlic clove, minced
1 medium onion, coarsely chopped
1 medium green pepper, cut into 1/2-inch pieces
1 medium sweet red pepper, cut into 1/2-inch pieces
1/2 pound fresh mushrooms, sliced
3/4 pound boneless skinless chicken breast, cut into cubes
4 cups cooked rigatoni or large tube pasta
4 cups torn romaine lettuce
1 can (11 ounces) mandarin oranges, drained
1 can (6 ounces) pitted ripe olives, drained
Directions
In a jar with a tight-fitting lid, combine the vinegar, soy sauce, 1-1/2 teaspoons oil, sugar and garlic; shake well and set aside. In a large nonstick skillet, saute the onion, peppers and mushrooms, in 1-1/2 teaspoons oil until tender. Remove and keep warm. In same skillet, saute chicken in remaining oil until juices run clear; drain.
In a large bowl, combine the pasta, lettuce, oranges, olives, onion mixture and chicken. Pour dressing over lettuce mixture; toss to coat. Serve immediately. Yield: 6 servings.
Nutritional Analysis: One serving (2 cups) equals 332 calories, 9 g fat (1 g saturated fat), 48 mg cholesterol, 464 mg sodium, 37 g carbohydrate, 4 g fiber, 24 g protein. Diabetic Exchanges: 2 lean meat, 2 vegetable, 1-1/2 starch, 1/2 fruit, 1/2 fat.

1 package (12 ounces) tricolor spiral pasta
2 cups cubed part-skim mozzarella cheese
2 cups cubed cooked chicken
1 large green pepper, chopped
1 large sweet red pepper, chopped
1 cup sliced fresh mushrooms
2 cans (2-1/4 ounces each) sliced ripe olives, drained
6 green onions, sliced
1 package (3-1/2 ounces) sliced pepperoni, halved
1/2 cup canola oil
1/3 cup red wine vinegar
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
Directions
Cook pasta according to package directions; rinse with cold water and drain well. In a large serving bowl, combine the cheese, chicken, peppers, mushrooms, olives, green onions, pepperoni and pasta.
In a small bowl, whisk together the remaining ingredients. Pour over salad; toss to coat. Cover and refrigerate until serving. Toss before serving. Yield: 14 servings.

Directions
Cook pasta according to package directions. Meanwhile, in a large bowl, combine the chicken, green pepper, carrot, celery, onions and peas.
In a small bowl, combine the sour cream, mayonnaise, ranch dressing mix, garlic salt, paprika and cayenne. Drain pasta and rinse in cold water; add to chicken mixture. Add dressing and toss to coat. Cover and refrigerate for at least 1 hour. Yield: 4 servings.

A zippy dressing lightly coats the tossed mixture of pasta, chicken, tomato and onion.

8 ounces uncooked bow tie pasta
1 can (4 ounces) chopped green chilies, drained
3 tablespoons lime juice
3 tablespoons canola oil
2 garlic cloves, minced
1 teaspoon ground cumin
1/2 teaspoon sugar
1/2 teaspoon hot pepper sauce
2 cups cubed cooked chicken breast
2 large tomatoes, chopped
1/3 cup chopped red onion
3 tablespoons minced fresh cilantro
Directions
Cook pasta according to package directions; rinse with cold water and drain. Cool completely. For dressing, combine the chilies, lime juice, oil, garlic, cumin, sugar and hot pepper sauce in a small bowl; stir well.
In a large bowl, combine the pasta, chicken, tomatoes, onion and cilantro. Add dressing and toss gently to coat. Cover and refrigerate overnight. Yield: 6 servings.

3-1/2 cups shredded cooked chicken
3 celery ribs, chopped
6 green onions, chopped
3/4 cup dried cherries
1 cup mayonnaise
2 teaspoons sugar
1/2 teaspoon salt
1/2 teaspoon Dijon mustard
1/8 teaspoon pepper
Dash dried tarragon
Directions
Cook pasta according to package directions. Meanwhile, in a large bowl, combine the chicken, celery, onions and cherries. Drain pasta and rinse in cold water; add to chicken mixture.
Combine the mayonnaise, sugar, salt, mustard, pepper and tarragon. Pour over salad and toss to coat. Chill until serving. Yield: 6 servings.

4 cups cubed cooked chicken
1 package (8 ounces) spiral pasta, cooked, drained and cooled
1-1/2 cups cubed Gouda or Monterey Jack cheese
1 cup sliced celery
1 cup seedless green grapes
1 cup mayonnaise
1/4 cup sour cream
3 tablespoons lemon juice
3 tablespoons honey
1 teaspoon dried thyme
1/2 teaspoon ground mustard
1/4 teaspoon white pepper
2/3 cup chopped pecans, toasted
Lettuce leaves, optional
Directions
In a large bowl, combine chicken, pasta, cheese, celery and grapes. In a small bowl, combine next seven ingredients. Pour over chicken mixture and toss to coat. Cover and chill until ready to serve; toss with pecans. Yield: 12 servings.

1 can (20 ounces) pineapple tidbits, drained

1 cup seedless green grapes
1 package (6 ounces) dried cranberries
1 cup ranch salad dressing
3/4 cup mayonnaise
2 cups salted cashews
Directions
Cook pasta according to package directions. Meanwhile, in a large bowl, combine the chicken, pineapple, celery, onions, grapes and cranberries. Drain pasta and rinse in cold water; stir into chicken mixture.
In a small bowl, whisk the ranch dressing and mayonnaise. Pour over salad and toss to coat. Cover and refrigerate for at least 1 hour. Just before serving, stir in cashews. Yield: 12 servings.

Ingredients
2 bone-in turkey breast (5 to 6 pounds each)
3 cups uncooked tricolor spiral pasta
2 celery ribs, diced
6 green onions, chopped
1/2 cup diced green pepper
1-1/2 cups mayonnaise
3/4 cup packed brown sugar
1 tablespoon cider vinegar
1-1/2 teaspoons salt
1-1/2 teaspoons lemon juice
2 cups salted cashew halves
Directions
Grill turkey, covered, over medium heat for 25-30 minutes on each side or until a meat thermometer reads 170°. Cool slightly. Cover and refrigerate until cool. Meanwhile, cook pasta according to package directions; drain and rinse in cold water.
Remove skin from turkey; chop turkey and place in a large bowl. add the pasta, celery, onions and green pepper. In a small bowl, combine the mayonnaise, brown sugar, vinegar, salt and lemon juice; pour over pasta mixture and toss to coat.
Cover and refrigerate for at least 2 hours. Just before serving, stir in cashews. Yield: 12 servings.

2 medium red potatoes, cooked and cubed
2 to 3 tablespoons mayonnaise
1 tablespoon dill pickle relish

1 medium cucumber, sliced

Because it seems to appeal to so many, this creamy salad is one of my favorite crowd-size recipes. I've taken it to potlucks and picnics...and it's always a hit.
This recipe is:

Prep: 30 min. + chilling
Ingredients
5 pounds red potatoes
4 celery ribs, sliced
1 bunch green onions, sliced
2 tablespoons dill weed
2 teaspoons salt
2 cups mayonnaise
1 bottle (16 ounces) cucumber ranch salad dressing
Directions
Place potatoes in a large kettle; cover with water. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until tender. Drain and cool. Cut potatoes into small cubes.
In a large serving bowl, combine the potatoes, celery, onions, dill and salt. In a small bowl, whisk mayonnaise and salad dressing until blended. Pour over potato mixture and stir gently to coat. Cover and refrigerate for at least 6 hours before serving. Yield: 36 servings (about 3/4 cup each).
Nutrition Facts: 1 serving (3/4 cup) equals 198 calories, 17 g fat (2 g saturated fat), 4 mg cholesterol, 304 mg sodium, 11 g carbohydrate, 1 g fiber, 1 g protein.
