HEARTY TURKEY 'N' RICE SOUP

1 teaspoon butter
1 rib celery -- sliced
1 medium carrot -- sliced
1/2 cup fresh mushrooms -- chopped
2 cups chicken or turkey broth
3/4 pound Velveeta cheese -- cubed
1 1/2 cups cooked turkey -- cubed
1 1/2 cups cooked rice
2 tablespoons chicken bouillon granules
1/2 teaspoon celery salt
1/4 teaspoon pepper
1. In a large saucepan, melt butter over medium-high heat. Add celery, carrot and mushrooms; cook and stir 6-8 minutes or until tender. Stir in broth, cheese, turkey, rice, bouillon, celery salt and pepper.
2. Cook and stir until cheese is melted and soup is heated through
