TURKEY COUSCOUS SALAD WITH CURRY DRESSING

Ingredients:
Curry Dressing: | |
⅓ cup | Canola Oil or Light Olive Oil |
1 Tbsp | Lemon Juice |
1 tsp | Granulated Sugar |
1/ | 2 |
Teaspoon Curry Powder | |
¼ tsp | Salt |
⅛ tsp | Ground Allspice |
Turkey Salad: | |
2 cups | Cooked Plain Couscous |
1 cup | Diced Cooked Turkey |
1 cup | Raisins |
1 | Medium Red Bell Pepper, cut into thin strips |
6 | Green Onions, chopped |
1 can | (15 Ounces) Garbanzo Beans, rinsed and drained |
½ cup | Chopped Toasted Almonds |
Directions:
Make curry dressing by combining all in dressing ingredients together in a tightly covered container and whisk or shake well.
For salad, place all salad ingredients except almonds in a large bowl. Pour dressing over salad and toss until coated. Cover and refrigerate about 1 hour or until chilled. Top with almonds and serve.
