Potato Broccoli Cheese Soup

An old fashioned family recipe that is easy to make.
Approximate Time: 1 hour
Yield: 6 - 8 servings
Ingredients:
4 large potatoes, peeled and cut up
2/3 cup butter
2/3 cup flour
1-1/2 quart milk
salt and pepper to taste
4 green onions, chopped
1 cup sour cream
2 cups crisp-cooked crumbled bacon
5 oz cheddar cheese, shredded
1 small head Broccoli, cooked until soft and mushy, then cut up very small (or you can mash it)
I like a pinch of garlic and onion powder when I add the salt and pepper.
Steps:
1. Bake potatoes in microwave until tender. Melt butter in a medium saucepan. Slowly blend flour with a wire whisk until thoroughly blended.
2. Gradually add milk to the butter-flour mixture, whisking constantly. Whisk in salt, pepper and seasonings and simmer over low heat, stirring constantly.
3. Cut potatoes in small chunks. When milk mixture is very hot, whisk in potatoes and broccoli. Add green onion, sour cream and crumbled bacon.
4. Heat thoroughly. Add cheese a little at a time until it is all melted in. You can cook for about 30 minutes or until done.
5. You can serve this with a sprinkle of extra cheddar on top.
