{soups-salads-and-salad-dressings} Drop Biscuits

 

It was 17º here this morning with a "feel-like temp" of 06º.  BRRRR!  Soup weather here for sure.  Our friends that we meet up with in FL in January, live in MN and it was -23º there this morning.  I'll bet they're anxious to leave town and head south.  The lady is putting new wallpaper on our hall wall today.  We had a buy a VERY HEAVY textured wallpaper instead of removing the old stuff and painting it because of the dufus who built those walls of heavy cardboard instead of drywall.  SIGH!  We're leaving Friday morning for FL and will be gone three weeks.  DD is morning in to care for all the animals.  LOL
We will be visiting my mom in MS on the way home from FL.  I'll send recipes through Thursday, then you all will have a much deserved vacation from me!  ROFL
Here's some easy biscuits to accompany the soups.................it's the season for soup/stew/chili here at least from the Midwest north!
 
Drop Biscuits

Prep: 15 minutes
Cook: 25 minutes
Yield: 18 to 22 biscuits
Ingredients
6 cups all-purpose flour
4 tablespoons baking powder
1/4 teaspoon salt
3 sticks cold butter, cut into pieces
3 1/2 cups whole milk
Melted butter, for brushing, optional
 
Directions
Preheat the oven to 400 degrees F.
Place the flour, baking powder and salt into a food processor and pulse a few times to combine. Add the butter and pulse until the dry ingredients and the butter are mostly combined. (Alternatively, cut the butter into the dry ingredients with a pastry cutter.) Drizzle in the milk and pulse (or stir) just until the dough comes together. Do not over mix.
Using a regular table spoon, or large spoon, drop spoonfuls of the mixture onto baking trays and bake until nice golden brown, 20 to 25 minutes. If desired, brush with melted butter after you remove them from the oven.
