Grilled Steak and Papaya Salad - Bobby Flay

4 servings
* 4 cloves garlic, chopped
* 1 Thai bird chile, chopped
* 2 tablespoons soy sauce
* 1 tablespoon fresh lime juice
* 2 to 3 tablespoons honey
* 1/4 cup peanut oil
* 1 1/2 pounds beef tenderloin
* Salt and freshly ground pepper
* Papaya Dressing, recipe follows
Place garlic, chile, soy sauce, lime juice, honey, and oil in a mini food processor and process until smooth. Place beef in a small baking dish, pour the marinade over, and turn to coat. Cover and marinate in the refrigerator for 1 hour.
Preheat the grill to medium-high. Remove the beef from the marinade and season it with salt and pepper. Grill meat until charred and cooked to medium-rare doneness, about 10 to 12 minutes. Remove from grill and let rest 10 minutes before slicing into 1/4-inch thick slices.
Papaya Dressing:
* 1 shallot, peeled and finely chopped
* 2 Thai bird chiles, finely chopped
* 1 tablespoon chopped fresh mint
* 1/2 cup rice wine vinegar
* 2 teaspoons sugar
* 2 tablespoons fish sauce
* 8 large red romaine lettuce leaves, cut into strips
* 1 bunch watercress
* 1 large green papaya, peeled and thinly shredded
* 2 carrots, peeled and thinly shredded
* 1/4 cup chopped roasted peanuts, for garnish
* Chopped cilantro, for garnish
In a small bowl, whisk together the shallot, chiles, mint, vinegar, sugar, and fish sauce. Set aside. In another bowl, toss the lettuce leaves and watercress together and then arrange the mixture on a platter.
Combine the papaya and carrots in a medium bowl. Evenly distribute the papaya mixture over the lettuce. Drizzle with a few tablespoons of the dressing. Arrange the steak on top and drizzle steak with some more dressing. Garnish with chopped peanuts and cilantro

BAKED PUMPKIN APPLE SALAD
1 med. pumpkin, seeds removed
Apples, peeled and sliced
1 c. sugar
2 tsp. cinnamon
1 tsp. ginger
1 tsp. nutmeg
1 tsp. crushed cloves
1 c. walnuts
1 c. raisins
1/2 c. red hots
2 tbsp. butter
Wash and clean pumpkin. Peel and slice enough apples to fill pumpkin about 3/4 full. Mix apples and listed ingredients (ingredients may be adjusted to taste).
Fill pumpkin with apple mixture. Loosely place aluminum foil over top. Bake 2 hours in 350 degree oven. Wrap pumpkin lid in foil separately and bake for
only 1 hour. Serve warm. Enjoy. Marilyn.

FROZEN CRANBERRY SALAD
6 oz cream cheese
3 tbsp sugar
2 tbs mayonnaise
1 c crushed pineapple
1 c whole cranberry sauce
1 c whipped topping
1/2 c nuts or coconut if desired
Cream the first 3 ingredients. Fold in remaining ingredients. Freeze.

1 cup of water
1 cup of fresh cranberries
1 cup of sugar
1 box of lemon jello
1 small can crushed pineapple
1 cup chopped pecans
Cook cranberries in water until tender. Remove from heat. Add sugar and jello,
pecans and pineapple. Mix well. Put in refrigerator to cool and set.

CRANBERRY PRETZEL SALAD
This is made in layers so read entire recipe before starting:
2 c. crushed pretzels (lg. ones crushed fine)
3/4 c. melted butter
1 tbsp. sugar
Mix first 3 ingredients together. Press into the bottom of a large flat baking dish. Bake 8 minutes at 350 degrees. Cool.
LAYER 2:
Mix together:
1 (8 oz.) pkg. cream cheese
1 (8 oz.) container Cool Whip
1/2 c. sugar
Spread on top of cooled crust.
LAYER 3:
Mix together:
1 lg. pkg. black cherry Jello
2 cans whole cranberry sauce
2 c. boiling water
Cool and pour over second layer.
Note: The third layer can be mixed first and set in the refrigerator while other layers are being prepared. Just don't forget it and leave it too long;
you don't want it to congeal. Enjoy. Marilyn.
