{soups-salads-and-salad-dressings} Boiled Dressing from Pioneer Dinners

 


I've made this several times after reading the book. It's quite good.

Boiled Dressing from Pioneer Dinners
Recipe By: Mark Kurlansy

Ingredients
1/2 cup vinegar
1 cup water
1 teaspoon sugar
1/2 teaspoon salt
1 teaspoon dry mustard
2 tablespoon corn starch
-- butter -- the size of a walnut
-- cream -- as needed

Instructions
Add all together except the butter and cream. Boil stirring all the
time for five minutes. It will be a thick paste. Add the butter and
stir in. As as much cream as you need to make it a dressing.

This was the dressing used for the potato salads which was potatoes,
onion (but not too much for the breath to get smelly) Parsley if
you've got it. Mix this with the dressing and slice hard cooked eggs
sliced over the top.

Recipe Notes
Served at the Western Old Time Revolving Table. A chapter in the food
on Oregon pioneer dinners.. It was a homemade circular table with a
small revolving table in the center.
