{soups-salads-and-salad-dressings} Barley Salad with Chicken and Corn

 

Barley Salad with Chicken and Corn - Serves 4
Published in: Everyday Food, page 82
Publish Date: June, 2010

Ingredients
1 cup barley
salt and pepper
2 bunch scallions -- cut into thirds crosswise and white ends halved
2 1/2 cup corn kernels -- fresh from 3 ears corn
3 tablespoon Extra virgin olive oil
1 pint grape tomatoes -- halved
1/4 cup parsley -- chopped
Reserved cooked chicken breast -- shredded
1 tablespoon plus 2 teaspoon fresh lime juice
5 ounce baby spinach.

Instructions
1. In a medium pot of boiling salted water cook barley according to package instructions. Drain and let cool.

2 Meanwhile, preheat oven to 450F. Place scallions and corn on a rimmed baking sheet. Toss with 1 Tablespoon oil and season with salt and pepper. Roast until vegetables are tender, about 25 minutes, stirring halfway through.

3. In a large bowl, combine barley, roasted vegetables, tomatoes, parsley, chicken, 1 tablespoon olive oil, and 1 tablespoon lime juice, season with salt and pepper. In a medium bowl, toss spinach with 1 tablespoon oil and 2 teaspoon of lime juice with salt and pepper. Serve spinach with chicken barley mixture.

Kidney Bean and Tuna Salad

1 can (15-1/2 oz) Kidney beans, drained
1/2 c Green pepper, chopped, fresh or frozen
1 can (6-1/2 oz) Water packed tuna drained and rinsed
1 T Low-fat mayonnaise
3 T Nonfat yogurt
1/2 c Celery, chopped
3 T Pickle relish (or substitute 1 Tbsp. minced onion, 1/4 tsp. dill, 1/8
tsp. black pepper, 1/8 tsp. salt)

Mix together all ingredients and chill.
Serving suggestion: Serve on whole-wheat pita, on crackers, or on a
bed of crisp lettuce.

Yield: 4 servings

Garden Pasta Salad Recipe


This salad includes not only garden vegetables but pasta too. It is a great side dish to any meal.—Bernard Bellin, Franklin, Wisconsin

This recipe is:

Quick

 

 


    * 6-8 Servings
    * Prep: 25 min. + chilling

Ingredients

    * 8 ounces uncooked spiral or cartwheel pasta
    * 3 cups assorted chopped fresh or frozen vegetables
    * 1 bottle (16 ounces) zesty Italian salad dressing, divided
    * 1 cup cubed cooked chicken, turkey or ham
    * 1 cup cubed cheddar, mozzarella or Monterey Jack cheese
    * 1 can (2.5 ounces) sliced ripe olives, drained
    * Minced fresh parsley or basil, optional

Directions

    * Cook pasta according to package directions. Drain but do not rinse. Return pasta to the pan; add vegetables and toss. Cover for 3-5 minutes. Vegetables will lightly steam in pasta.
    * Place pasta in a large salad bowl. Top with three-fourths of the dressing and lightly toss. Chill several hours or overnight.
    * If pasta is dry, add remaining dressing along with meat, cheese, olives, and parsley or basil if desired. Chill until serving. Yield: 6-8 servings.


Nutrition Facts: 1 serving (1 cup) equals 422 calories, 29 g fat (6 g saturated fat), 33 mg cholesterol, 1,128 mg sodium, 27 g carbohydrate, 2 g fiber, 14 g protein.

BLT Bow Tie Pasta Salad Recipe


 first had this summery salad at a family reunion. It's one of my husband's favorite dinners. Sometimes, we leave out the chicken and serve it as a side dish instead. --Jennifer Madsen of Rexburg, Idaho.

    * 11 Servings
    * Prep/Total Time: 25 min.

Ingredients

    * 2-1/2 cups uncooked bow tie pasta
    * 6 cups torn romaine
    * 1-1/2 cups cubed cooked chicken breast
    * 1 medium tomato, diced
    * 4 bacon strips, cooked and crumbled
    * 1/3 cup reduced-fat mayonnaise
    * 1/4 cup water
    * 1 tablespoon barbecue sauce
    * 1-1/2 teaspoons white vinegar
    * 1/4 teaspoon pepper

Directions

    * Cook pasta according to package directions. Drain and rinse under cold water. In a large serving bowl, combine the pasta, romaine, chicken, tomato and bacon.
    * In a small bowl, whisk together the mayonnaise, water, barbecue sauce, vinegar and pepper. Pour over pasta mixture; toss to coat evenly. Serve immediately. Yield: 11 servings.

Orange Pasta Salad Recipe


The orange dressing has a fresh flavor that really complements the chicken, pasta and fruit. And toasted almonds add lots of festive crunch.

    * 8-10 Servings
    * Prep: 20 min. + chilling

Ingredients

    * 5 cups cubed cooked chicken
    * 3 cups cooked pasta (spirals, shells or wheels)
    * 1-1/2 cups sliced celery
    * 1/2 cup sliced green onions
    * 1 cup drained pineapple tidbits
    * 1 can (11 ounces) mandarin oranges, drained
    * 2 kiwifruit, peeled and cut into chunks
    * 1 cup mayonnaise
    * 1/3 cup vegetable oil
    * 2 tablespoons cider vinegar
    * 2 tablespoons orange juice concentrate
    * 1-1/2 teaspoons salt
    * 1 teaspoon ground mustard
    * 1 cup slivered almonds, toasted

Directions

    * In a large bowl, combine chicken, pasta, celery, onions, pineapple, oranges and kiwi. In a small bowl, mix the next six ingredients. Pour over chicken mixture; toss to coat. Cover and chill for several hours. Toss with almonds just before serving. Yield: 8-10 servings.


Nutrition Facts: 1 serving (1 cup) equals 525 calories, 36 g fat (5 g saturated fat), 70 mg cholesterol, 554 mg sodium, 26 g carbohydrate, 3 g fiber, 25 g protein.
