Chicken-Spinach Pasta Salad Recipe


Hot summer nights call for cool salads such as this. I created the recipe by accident one day when tossing together whatever ingredients I had on hand.

This recipe is:

Quick

 

 


    * 6-8 Servings
    * Prep/Total Time: 20 min.

Ingredients

    * 1-3/4 cups uncooked small pasta shells
    * 4 cups baby spinach
    * 2-1/2 cups julienned cooked chicken
    * 1/2 cup crumbled blue cheese
    * 1/4 cup pine nuts
    *

      DRESSING:
    * 1 tablespoon water
    * 1 tablespoon lemon juice
    * 1 tablespoon white balsamic vinegar
    * 1 tablespoon vegetable oil
    * 1 tablespoon minced chives
    * 1/2 teaspoon Dijon mustard
    * 1/4 teaspoon dried basil
    * Dash each garlic powder and cayenne pepper

Directions

    * Cook pasta according to package directions; rinse in cold water and drain well. In a large bowl, gently toss the pasta, spinach, chicken, blue cheese and pine nuts. In a small bowl, whisk the dressing ingredients. Drizzle over salad and toss to coat. Serve immediately. Yield: 6-8 servings.

Pine Nuts

Also know as pignolia or pinon, the pine nut is the small seed from one of several pine tree varieties. They are small elongated ivory-colored nuts measuring about 3/8 inch long and having a soft texture and a buttery flavor. Frequently used in Italian dishes and sauces such as pesto, pine nuts are often toasted to enhance their flavor.

"These stuffed shells are great for a cool summer meal," assures Karen Lee of Waynesville, North Carolina. Calling for just four ingredients, including chicken salad from the deli, they are easy to assemble. The only thing you have to cook are the pasta shells, which take just minutes.

Ingredients

    * 1-1/2 pounds prepared chicken salad
    * 1/2 cup seedless red grapes, halved
    * 18 jumbo pasta shells, cooked, drained and cooled
    * 2/3 cup ranch salad dressing

Directions

    * In a large bowl, combine the chicken salad and grapes. Spoon about 2 tablespoons into each pasta shell. Refrigerate until serving. Drizzle with salad dressing. Yield: 6 servings.

Chicken Pasta Salad a l'Orange Recipe

 

"I got this recipe from an old cookbook just after I was married 25 years ago," says Ann Berger of Howell, Michigan. "All of my six kids like it—even those who don't usually eat salad!"

    * Prep/Total Time: 30 min.

Ingredients

    * 2-1/2 cups uncooked bow tie pasta
    * 2 cups cubed cooked chicken breast
    * 2 celery ribs, thinly sliced
    * 1 can (11 ounces) mandarin oranges, drained
    * 1 can (2-1/4 ounces) sliced ripe olives, drained
    * 1/3 cup fat-free plain yogurt
    * 1/3 cup reduced-fat mayonnaise
    * 1/4 cup thawed orange juice concentrate
    * 1 tablespoon white vinegar
    * 2 teaspoons sugar
    * 1/4 teaspoon salt
    * 1/4 teaspoon ground mustard
    * 6 cups torn mixed salad greens
    * 1/2 cup cubed avocado

Directions

    * Cook pasta according to package directions; drain and rinse in cold water. In a large bowl, combine the pasta, chicken, celery, oranges and olives.
    * For dressing, in a small bowl, combine the yogurt, mayonnaise, orange juice concentrate, vinegar, sugar, salt and mustard. Pour over pasta mixture and toss to coat.
    * For each serving, spoon 1-1/3 cups pasta mixture over 1 cup of greens; top with about 1 tablespoon avocado. Yield: 6 servings.

Ingredients

    * 3 cups uncooked bow tie pasta
    * 4 cups cubed cooked chicken breast
    * 2 cups chopped tomatoes
    * 1/2 cup chopped red onion
    * 4 bacon strips, cooked and crumbled
    * 1/4 cup crumbled Gorgonzola cheese
    * 1/2 cup olive oil
    * 1/4 cup minced fresh basil
    * 1/4 cup balsamic vinegar
    * 2 tablespoons brown sugar
    * 1 teaspoon minced garlic
    * 1/4 teaspoon salt
    * 1/4 teaspoon pepper
    * 1/2 cup grated Parmesan cheese

Directions

    * Cook pasta according to package directions. Drain and rinse in cold water; transfer to a large bowl. Add the chicken, tomatoes, onion, bacon and Gorgonzola cheese.
    * In a small bowl, whisk the oil, basil, vinegar, brown sugar, garlic, salt and pepper. Drizzle over salad and toss to coat; sprinkle with Parmesan cheese. Yield: 8 servings.

    * Prep: 15 min. + chilling

Ingredients

    * 6 ounces uncooked spiral pasta
    * 1/4 cup reduced-sodium soy sauce
    * 1/3 cup white wine vinegar
    * 2 tablespoons canola oil
    * 2 tablespoons sugar
    * 2 tablespoons sesame seeds, toasted
    * 1/2 teaspoon salt
    * 1/4 teaspoon pepper
    * 3 cups chopped cooked chicken breast
    * 2 cups torn fresh spinach
    * 1/2 cup sliced green onions
    * 1/4 cup minced fresh parsley

Directions

    * Cook pasta according to package directions. In a jar with a tight-fitting lid, combine the soy sauce, vinegar, oil, sugar, sesame seeds, salt and pepper; shake well. Drain pasta and rinse in cold water; place in a bowl. Add chicken and half of the dressing; toss to coat. Cover and refrigerate for at least 4 hours. Set remaining dressing aside.
    * Just before serving, add the spinach, onions, parsley and remaining dressing; toss to coat. Yield: 8 servings.

Ingredients

    * 2 tablespoons cider vinegar
    * 2 tablespoons reduced-sodium soy sauce
    * 4-1/2 teaspoons olive oil, divided
    * 1 tablespoon sugar
    * 1 garlic clove, minced
    * 1 medium onion, coarsely chopped
    * 1 medium green pepper, cut into 1/2-inch pieces
    * 1 medium sweet red pepper, cut into 1/2-inch pieces
    * 1/2 pound fresh mushrooms, sliced
    * 3/4 pound boneless skinless chicken breast, cut into cubes
    * 4 cups cooked rigatoni or large tube pasta
    * 4 cups torn romaine lettuce
    * 1 can (11 ounces) mandarin oranges, drained
    * 1 can (6 ounces) pitted ripe olives, drained

Directions

    * In a jar with a tight-fitting lid, combine the vinegar, soy sauce, 1-1/2 teaspoons oil, sugar and garlic; shake well and set aside. In a large nonstick skillet, saute the onion, peppers and mushrooms, in 1-1/2 teaspoons oil until tender. Remove and keep warm. In same skillet, saute chicken in remaining oil until juices run clear; drain.
    * In a large bowl, combine the pasta, lettuce, oranges, olives, onion mixture and chicken. Pour dressing over lettuce mixture; toss to coat. Serve immediately. Yield: 6 servings.
