Chicken Minestrone Soup
Soups are so good in the winter months and this is and excellent
soup with great flavor. It is very easy to make.

1 cup sliced carrots (2 medium)
1/2 cup chopped celery (1 stalk)
1/2 cup chopped onion (1 medium)
2 cloves garlic, minced
1 tablespoon olive oil
3 cans (14 ounces each) chicken broth
1 can (15 to 19 ounces) white kidney beans
-- (cannellini beans), rinsed and drained
8 ounces skinless, boneless chicken breasts, cut
-- into bite-size pieces
4 ounces fresh green beans, cut into 1/2-inch pieces (1 cup)
1 teaspoon dried Italian seasoning, crushed
1/4 teaspoon freshly ground black pepper
2/3 cup dried bow tie pasta
1 medium zucchini, quartered lengthwise and cut
-- into 1/2-inch-thick slices
1 can (14 1/2 ounces) no-salt-added diced
-- tomatoes, undrained
In a 5- to 6-quart Dutch oven, cook the carrots, celery, onion, and
garlic in hot oil over medium heat for 5 minutes, stirring frequently. Add
broth, white kidney beans, chicken, green beans, Italian seasoning and
pepper. Bring to boiling; add pasta. Reduce heat. Simmer, uncovered, for 5
minutes.
Stir in zucchini. Return to boiling; reduce heat. Simmer, uncovered, for
8 to 10 minutes more or until pasta is tender and green beans are
crisp-tender. Stir in undrained tomatoes; heat through.

Author Note: Although classic minestrone is an all-vegetable soup that may
or may not contain legumes, the addition of chicken makes this a hearty
