30-Minute Turkey Stew


SERVES

Got leftover turkey? Our 30-Minute Turkey Stew will breathe new life into your leftovers and no one will ever guess how you did it. This hearty one-pot meal is sure to stick to your ribs and stretch your food budget.

What You'll Need:
  • 1 tablespoon vegetable oil
  • 3 celery stalks, cut into 1/2-inch chunks
  • 1 small onion, chopped
  • 3 potatoes, peeled and cut into 1/2-inch chunks
  • 2 large carrots, peeled and cut into 1/2-inch slices
  • 4 cups chicken or turkey broth
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon black pepper
  • 3/4 cup water
  • 2 tablespoons all-purpose flour
  • 3 cups leftover cooked turkey, pulled apart into 1-inch pieces
What To Do:
  1. In a soup pot, heat oil over high heat. Add celery and onion, and cook 4 to 5 minutes. Add potatoes, carrots, chicken broth, sage, and pepper. Bring to a boil, reduce heat to medium-low, and cook 15 to 18 minutes, or until potatoes are almost fork-tender, stirring occasionally.
     
  2. In a small bowl, combine water and flour; mix well. Pour into soup pot and stir until thickened. Add turkey and cook 6 to 8 minutes, or until turkey is hot, stirring occasionally.

It was 47º here this morning.  Ragweed warnings are through the roof!

I'm going to Cape this morning for some speed errands, then working 1-5 this afternoon.  It's a beautiful day here, but perfect to put the soup-pot on kind of day!

Sweet & Salty Grilled Cheese Sandwich

INGREDIENTS

SERVINGS 1

2 slices fresh bread, good quality

6 -8 slices sharp cheddar cheese, sliced thinly

2 -4 dates, halved and pitted

butter or mayonnaise

 

DIRECTIONS

1. Spread a THIN coat of butter or mayonnaise on one side of each slice of bread.

2. On unbuttered side, layer cheese and dates.

3. Cover with the second slice, buttered side out.

4. Preheat a frying pan on med-high heat.

5. Place sandwich in pan.

6. Cook 2-3 minutes until golden and cheese has melted enough that you can flip it without everything slipping out.

7. Flip over, flatten with spatula if desired.

8. Cook another 2-3 minutes until golden.

Tomato Cheese Soup

Ingredients

2 (10 3/4 ounce) cans tomato soup

1 cup milk

1⁄2 cup Velveeta cheese

6 slices toast

 

DIRECTIONS

1. Mix the two cans of tomato soup, milk and cheese together in a saucepan. You can add more milk or cheese.

2. Cook until warm.

3. Pour over toast, OR Dunk sandwich above in the soup!

 

As you waste your breath complaining about life, someone out there is breathing their last.

White Chili with Green Chilies

2 lbs. navy beans, soaked
3 medium yellow onions, diced
1 small (no. 3) can green chilies, diced
1 tablespoon garlic, chopped
1/3 cup cumin
1/3 cup cilantro, chopped
2 tablespoon oregano, chopped
1/2 teaspoon cayenne
1 teaspoon cloves, chopped
3/4 gallon chicken stock
12 oz monterey jack cheese, shredded
24 oz sour cream
2 lbs. chicken, diced
1/3 cup olive oil

Wash beans. Cover water 3 inches over the beans and soak over night.

Wash chicken. Bake until done. Do not overcook. Cool and dice.

Heat oil.

Saute onions, chilies and garlic until translucent. Add spices.

Add beans and chicken stock and cook until beans are soft, about 2 to 3 hours.

Add cheese, stirring continuously.

Add sour cream, stirring constantly. Add chicken.

{soups-salads-and-salad-dressings} Hearty Sirloin Chili

 

Hearty Sirloin Chili

2 tablespoons vegetable oil
1/2 cup flour
Salt and pepper
2 pounds sirloin, bite size chunks
2 large onions, chopped
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
2 jalapenos, seeded and chopped
3 cloves garlic, chopped
2 tablespoons chili powder
1 tablespoon cumin
1 teaspoon oregano
12-ounce bottle ale
2 cups low sodium beef stock
4 cups crushed tomatoes
2 cups canned black beans, drained and rinsed
2 cups canned kidney beans, drained and rinsed
Garnish: Shredded cheddar, red onion, scallions, sour cream

Heat oil in large heavy pot over medium high heat. In a pie plate combine salt, pepper and flour with a fork.

Toss sirloin cubes with flour to coat. Shake off excess flour. Brown sirloin in pot on all sides and remove meat to a plate. If necessary add more oil to pan and add onions.

Cook onions over medium heat until they begin to soften. Stir in green, red and jalapeno peppers and cook for 3 to 5 minutes.

Add chili powder, cumin and oregano. Return browned meat to pan and pour in beer and beef stock. Bring to a boil and cover and reduce heat to a simmer. Cook for 45 minutes or until meat is tender.

Add crushed tomatoes and cook for 20 minutes.

Stir in black and kidney beans and gently simmer for 10 minutes. Serve with cheddar, onion, scallions and sour cream.

{soups-salads-and-salad-dressings} Chili Con Carne

 

Chili Con Carnes

1 large round steak cut into 1 inch cubes

1 C. chopped onion

1 to 2 cans (4 oz. each) chopped jalapeno peppers (depending on how hot you like it)

1 32 oz. can crushed tomatoes

8 oz. tomato sauce

2 t. crushed garlic

salt and pepper

Saute beef cubes in oil until brown in small batches. Add onion, garlic, salt and pepper. Cook until onions start to get transparent. Add jalapeno peppers, tomatoes and tomato sauce. Cook 1 hour or until beef is very tender.

Serve with warmed flour tortillas and refried beans.

Serves 6 – 8.
