Chicken Pasta Salad Recipe

 

Santa himself might find it hard to resist this hearty, colorful chicken salad packed with veggies, pasta and flavor. Our Test Kitchen added just the right touch of heat to warm and welcome friends and family in from the cold! TIP: This versatile recipe can be varied for all seasons of the year by adding hard-cooked eggs, different meats, such as turkey, ham, tuna or shrimp…even by changing the nuts and vegetables to whatever you have on hand!

    * Prep: 25 min. + chilling

Ingredients

    * 1 cup uncooked spiral pasta
    * 1 cup cubed cooked chicken
    * 1 small green pepper, diced
    * 1 small carrot, thinly sliced
    * 1 celery rib, thinly sliced
    * 1/4 cup chopped white onion
    * 1/4 cup chopped red onion
    * 1/4 cup frozen peas, thawed
    * 1/4 cup sour cream
    * 1/4 cup mayonnaise
    * 1 tablespoon ranch salad dressing mix
    * 1/4 teaspoon garlic salt
    * 1/4 teaspoon paprika
    * 1/8 teaspoon cayenne pepper

Directions

    * Cook pasta according to package directions. Meanwhile, in a large bowl, combine the chicken, green pepper, carrot, celery, onions and peas.
    * In a small bowl, combine the sour cream, mayonnaise, ranch dressing mix, garlic salt, paprika and cayenne. Drain pasta and rinse in cold water; add to chicken mixture. Add dressing and toss to coat. Cover and refrigerate for at least 1 hour. Yield: 4 servings.


Nutrition Facts: 1 cup (prepared with chicken breast, reduced-fat sour cream and fat-free mayonnaise) equals 199 calories, 3 g fat (1 g saturated fat), 34 mg cholesterol, 645 mg sodium, 27 g carbohydrate, 3 g fiber, 15 g protein. Diabetic Exchanges: 1-1/2 starch, 1 lean meat, 1 vegetable.

Grilled Chicken Pasta Salad Recipe


"My local supermarket deli carried a great pasta salad but kept the recipe a secret," says Leanne Royce of Appleton, Wisconsin. "I was determined to duplicate it at home and created this version."

    * 2 Servings
    * Prep/Total Time: 25 min.

Ingredients

    * 1 cup uncooked rigatoni or large tube pasta
    * 1 boneless skinless chicken breast half (6 ounces)
    * 1/4 teaspoon lemon-pepper seasoning
    * 1 cup fresh broccoli florets
    * 1/4 cup chopped sweet red pepper
    * 1/4 cup chopped red onion
    * 1/4 cup Parmesan peppercorn ranch salad dressing
    * 1 tablespoon grated Parmesan cheese
    * 1-1/2 teaspoons lemon juice

Directions

    * Cook pasta according to package directions. Meanwhile, sprinkle the chicken with lemon-pepper.
    * Using long-handled tongs, dip a paper towel in cooking oil and lightly coat the grill rack. Grill chicken, covered, over medium heat or broil 4 in. from the heat for 7-8 minutes on each side or until a meat thermometer reads 170°. Cut into 1-in. cubes.
    * Drain pasta. In a large bowl, combine the pasta, chicken, broccoli, red pepper, red onion, salad dressing, cheese and lemon juice; toss to coat. Serve immediately or cover and refrigerate until serving. Yield: 2 servings.


Nutritional Analysis: 1-1/2 cups (prepared with fat-free salad dressing) equals 300 calories, 4 g fat (1 g saturated fat), 49 mg cholesterol, 488 mg sodium, 42 g carbohydrate, 4 g fiber, 24 g protein.

Chicken Pasta Salad Recipe


My dad grows incredibly delicious tomatoes and red peppers. This year's crop was especially abundant, so I created this salad combination to take advantage of the bounty. My husband gave this recipe a definite "thumbs up".

This recipe is:

    * 8-10 Servings
    * Prep: 15 min. + chilling

Ingredients

    * 1 package (16 ounces) bow tie or spiral pasta, cooked and drained
    * 3 cups cubed cooked chicken
    * 2 tablespoons olive oil
    * 1/4 to 1/2 teaspoon garlic powder
    * 1 cup mayonnaise
    * 1/2 cup Caesar or Parmesan salad dressing
    * 1 tablespoon honey mustard or other prepared mustard
    * 2 to 3 teaspoons curry powder
    * 1 teaspoon salt
    * 1/4 teaspoon pepper
    * 1 sweet red pepper, chopped
    * 1 large tomato, chopped
    * 1 cup shredded carrot

Directions

    * In a large bowl, toss the pasta, chicken, oil and garlic powder. Cover and chill. In a small bowl, combine the mayonnaise, salad dressing, mustard, curry powder, salt and pepper; cover and chill. Just before serving, add the red pepper, tomato, carrot and dressing to pasta mixture; gently toss to coat. Yield: 8-10 servings.


Nutrition Facts: 1 serving (1 each) equals 487 calories, 29 g fat (5 g saturated fat), 49 mg cholesterol, 529 mg sodium, 37 g carbohydrate, 2 g fiber, 19 g protein.

Ingredients

    * 2 cups uncooked bow tie pasta
    * 2 cups cubed cooked chicken
    * 1 can (11 ounces) mandarin oranges, drained
    * 1 cup halved green grapes
    * 1/2 cup ranch salad dressing

Directions

    * Cook pasta according to package directions. Meanwhile, in a large bowl, combine the chicken, mandarin oranges and grapes. Drain and rinse pasta with cold water; add to chicken mixture. Drizzle with salad dressing; toss to coat. Cover and refrigerate for at least 1 hour before serving. Yield: 6 servings.

    * Prep: 15 min. + chilling

Ingredients

    * 4 cups uncooked medium shell pasta
    * 4 cups cubed cooked chicken
    * 1 package (16 ounces) frozen mixed vegetables, cooked and drained
    * 2 celery ribs, thinly sliced
    * 1/2 cup finely chopped onion
    * 1 bottle (8 ounces) ranch salad dressing
    * 1/2 to 3/4 teaspoon salt
    * 1/2 teaspoon dill weed
    * 1/4 to 1/2 teaspoon pepper
    * 1 cup (4 ounces) shredded cheddar cheese

Directions

    * Cook pasta according to package directions. Rinse in cold water and drain. Cool. In a large bowl, combine the pasta, chicken, mixed vegetables, celery and onion. In a small bowl, combine the salad dressing, salt, dill and pepper. Stir into pasta mixture. Stir in cheese. Cover and refrigerate for at least 1 hour. Yield: 12 servings.

Mexican Summer Salad - Serves 6

Ingredients
Dressing:
2 teaspoon whole cumin seeds
2 teaspoon whole coriander seeds
1 chile de arbol (with seeds) torn into very small pieces or 1/2 teaspoon chili flakes* see Cook's Note
1/4 cup pine nuts
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
Salad:
3/4 cup pitted and halved black kalamata olives
3/4 cup pitted and halved green olives
3/4 cup halved assorted colored cherry or grape tomatoes
1/4 cup chopped fresh cilantro leaves
8 ounce Mexican Cotija or feta cheese -- cubed


Instructions

In a small, dry skillet, toast the cumin seeds, coriander seeds, chile, and pine nuts over medium-high heat, stirring constantly, until fragrant, about 3 minutes. Transfer the dressing to a serving bowl and whisk in the olive oil. Season with salt and pepper, to taste.

Add the olives, tomatoes, cilantro and cheese. Toss gently to combine and serve.

*Cooks Note: The dried chile can also be cut into small rings using scissors.

Trattoria Salad with Peach Glazed Chicken Skewers - Serves 2

Ingredients
for the baste and the skewers
1 can peach nectar -- 11 oz
1 tablespoon peach preserves
1 tablespoon soy sauce
1 tablespoon garlic -- minced
1 teaspoon Dijon mustard
pinch of cayenne
1 chicken breast -- boneless, skinless, cut into 12 pieces (5 to 6 oz)
1 peach -- pitted, cut into 12 pieces
1 tablespoon EV olive oil
salt and black pepper
For the Salad
1 tablespoon cider vinegar
1 tablespoon EV olive oil
salt to taste
2 slice pancetta
4 cup mixed salad greens
4 cherry tomatoes -- quartered
1 peach -- pitted, thinly sliced
4 tablespoon pine nuts -- toasted

Instructions
Preheat grill to medium.

Combine nectar, preserves, soy sauce, garlic, Dijon, and pepper flakes for the baste in a saucepan and bring to a boil. Reduce heat and simmer liquid until reduced by half, 20 minutes. Reserve 1/4 cup for vinaigrette; transfer remaining liquid to a bowl for basting skewers.

Combine chicken and peach pieces in a bowl; toss with 1 tablespoon oil. Alternately thread chicken and peach pieces onto 4 skewers; season with salt and black pepper. Chill skewers until ready to grill.

Whisk together reserved 1/4 cup base with vinegar. Drizzle in 1 tablespoon oil, while whisking constantly to form a vinaigrette. Season with salt.

Cook pancetta in a skillet over high heat until crisp; transfer to a paper towel lined plate.

Toss together greens, tomatoes, and peach slices in a bowl, set aside.

Grill skewers, covered, 2 minutes. Turn and grill 2 minutes more, brushing several times with reserved baste. Turn skewers again and grill, brushing with baste several more times, until chicken is cooked though, 2 minutes more (for a total of 6 minutes).

Divide salad between 2 serving plates and top each with pine nuts and a piece of pancetta, drizzle with vinaigrette and top with 2 skewers.
