I'm brand new to the group, I just wanted to say hello and tell you a little bit about myself. I am a mother of two children under the age of 5. We have a very hectic household, and I am looking to start making some healthier food choices and meals for my family. Baked Apples and Bacon - Serves 4
Recipe By: Tyler Florence
Published in: Tyler's Ultimate
Ingredients
12 strip applewood smoked bacon
4 to 6 sprigs fresh thyme -- leaves only
3 med Golden Delicious apples
Extra-virgin olive oil
2 tablespoon superfine sugar
Baby arugula
Instructions
Preheat the oven to 375 degrees F.
Arrange the bacon on a sheet tray, sprinkle with some of the thyme and bake until crispy, about 12 to 15 minutes.
Slice the apples horizontally to create 5 to 6 cross sections of the apple. On a separate sheet tray lined with a silpat or parchment paper lay the apples out in a single layer and drizzle with a little olive oil. Sprinkle a little sugar and thyme on each slice then bake in the oven until the apples begin to dehydrate and sugar has melted and caramelized, about 8 to 10 minutes
To serve, lay the apple and bacon slices, alternating, in a long overlapping line on a serving platter. Or, break the bacon pieces in half and reassemble the apple slices back together, placing crispy bacon pieces in between each slice. Garnish with arugula and serve.

Roasted Garlic, Potato, Leek & Fennel Soup
soups
1 cup Whole garlic cloves --
1 Peeled
4 tablespoons Olive oil; divided
4 Leeks; sliced thin, (white
1 Parts only)
2 Fennel bulbs; diced
8 cups Vegetable stock
1 pound Potatoes; peeled and
1 Diced
2 tablespoons Fresh thyme leaves --
1 Chopped fine
2 Bay leaves
1 Salt and pepper; to taste
1 Dairy sour cream or yogurt
Place garlic cloves in small baking pan; add 2 tablespoons (30 ml) of the
olive oil and stir to coat well. Roast at 325 F for 20 minutes or until
golden. In large heavy saucepan heat remaining 2 tbs (30 ml) oil over
medium heat. Add leeks and fennel; saute until mixture begins to colour,
about 10 minutes. Add stock, potatoes, roasted garlic, thyme and bay
leaves; bring to a boil. Reduce heat and simmer for 40 minutes or until
vegetables are tender. Remove bay leaves and discard. Puree soup, in
batches, in food processor or blender. Return to sauce pan and heat
through. Season with salt and pepper to taste. Serve with a dollop of
sour cream or yogurt.
Serves 6 to 8.

Moroccan Couscous Soup - {harira Couscous}

6 cups warm vegetable or chicken stock
(in a pinch you can also use water)
3/4 cup fast-cook couscous
5 tablespoons butter
Salt; to taste
Freshly-ground black pepper; to taste
1 pinch saffron
1 1/2 teaspoons ground aniseed
1/4 cup finely-chopped cilantro
Mix the stock, couscous, butter, salt and pepper, and saffron in a saucepan
and bring to a boil. Cook over medium heat for three minutes. Stir in
the aniseed and cilantro. Serve immediately -- if you delay it will turn
into a gloppy mess.
Serve hot to 6 people.
Comments: This buttery and aromatic mideastern soup is both beautiful and
palate-stimulating as a first course to plain, solid fare as well as to a
Moroccan meal. It's especially terrific on those occasions when unexpected
guests arrive for dinner. Why? Because the couscous continues to expand
in everyone's stomach, leaving a feeling of fullness and repletion. And
it's lightening fast to make.

I've taken this dish to 4-H potlucks, church functions and my parents'
50th anniversary party. I also make it for guests. It's a salad with a
little spunk!"

Ingredients
* 3 cups uncooked spiral pasta
* 1 pound ground beef
* 1 envelope taco seasoning
* 1-1/4 cups mayonnaise
* 2 to 3 tablespoons milk
* 3-3/4 teaspoons cider vinegar
* 3-3/4 teaspoons sugar
* 1 tablespoon ground mustard
* 7 cups torn iceberg lettuce
* 1 to 2 medium tomatoes, chopped
* 2 cups (8 ounces) shredded cheddar cheese
* 1 to 2 cups crushed nacho tortilla chips
Directions
* Cook pasta according to package directions. Meanwhile, in a large
skillet, cook beef over medium heat until no longer pink; drain. Stir in
taco seasoning; heat through.
* In a small bowl, combine the mayonnaise, milk, vinegar, sugar and
mustard; set aside.
* Drain pasta; place in a large bowl. Add beef and mayonnaise
mixture; toss to coat. Add lettuce, tomatoes and cheese; toss to
combine. Sprinkle with tortilla chips. Yield: 12-14 servings.

* 1 package (16 ounces) frozen pasta with broccoli, corn and carrots
in garlic-seasoned sauce
* 1-1/2 cups tomato juice
* 1 can (14-1/2 ounces) diced tomatoes, undrained
* 2 teaspoons Italian seasoning
* 1/4 cup shredded Parmesan cheese, optional
Directions
* In a large saucepan, cook beef over medium heat until no longer
pink; drain. Add the broth, pasta with vegetables, tomato juice,
tomatoes and Italian seasoning; bring to a boil. Reduce heat; cover and
simmer for 10 minutes or until vegetables are tender. Serve with
Parmesan cheese if desired. Yield: 6 servings.
Nutritional Analysis: 1-1/2 cups (prepared with lean ground beef and
reduced-sodium beef broth and tomato juice; calculated without Parmesan
cheese) equals 253 calories, 9 g fat (4 g saturated fat), 46 mg
cholesterol, 680 mg sodium, 21 g carbohydrate, 3 g fiber, 20 g protein.
Diabetic Exchanges: 2-1/2 lean meat, 1 starch, 1 vegetable.

Spinach and Citrus Salad with Sweet and Spicy Pecans

Ingredients
3 cup fresh spinach -- washed and dried, cut into chiffonade
2 green onions -- chopped
1 orange -- supremed and halved
1 tablespoon butter
1/2 teaspoon sugar
1/2 cup pecan halves
1 teaspoon dried rosemary
1/4 teaspoon cayenne
Salt and freshly ground black pepper
Citrus Dressing -- recipe follows
Instructions
Put the spinach and green onions in large salad bowl and sprinkle with the halved citrus supremes. In a small saute pan over medium heat, add the butter and sugar and stir until the butter is melted. Add the pecans and toss until the pecans begin to brown. Stir in the rosemary and cayenne and stir just a few seconds to release the aroma. Remove from the heat and season with salt and pepper, to taste. Sprinkle the pecans on the salad while still warm. Drizzle the dressing over salad and serve.
Citrus Dressing:
1 teaspoon Dijon mustard
2 tablespoons orange or grapefruit juice (or a combination)
3 tablespoons canola oil
1 tablespoon olive oil
Salt and freshly ground black pepper
In a small bowl, add all the ingredients and whisk until emulsified.

* 1/2 pound Italian turkey sausage links, casings removed
* 1 medium zucchini, sliced
* 1 cup sliced fresh mushrooms
* 1 small onion, chopped
* 1 can (14-1/2 ounces) no-salt-added diced tomatoes
* 1 cup water
* 1 cup reduced-sodium chicken broth
* 1 teaspoon dried basil
* 1/4 teaspoon pepper
* Minced fresh basil and crushed red pepper flakes, optional
Directions
* In a large saucepan, cook the sausage, zucchini, mushrooms and onion over medium heat until meat is no longer pink; drain. Add the tomatoes, water, broth, dried basil and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Sprinkle with fresh basil and pepper flakes if desired. Yield: 4 servings.
Nutrition Facts: 1 cup equals 128 calories, 5 g fat (1 g saturated fat), 34 mg cholesterol, 528 mg sodium, 9 g carbohydrate, 3 g fiber, 12 g protein. Diabetic Exchanges: 2 vegetable, 1 medium-fat meat.

* 2 cans (8 ounces each) no-salt-added tomato sauce
* 1 can (14-1/2 ounces) no-salt-added diced tomatoes, undrained
* 1 tablespoon dried parsley flakes
* 2 teaspoons reduced-sodium beef bouillon granules

* 1/2 teaspoon dried basil
