Melokhia - {ancient Egyptian Mallow Soup}
soups/stews
1/2 pound raw lamb or chicken
2 onions; chopped small
3 garlic cloves; crushed
Salt; to taste
Freshly-ground black pepper; to taste
6 cups water
3 ounces dried melokhia leaves; crushed in hands
(or substitute spinach, chard, or b
greens mixed with parsley)
6 large garlic cloves
2 tablespoons olive oil
2 tablespoons coriander
1/2 teaspoon cayenne

3 onions; thinly sliced,
and soaked in
2 tablespoons vinegar
Boil the meat, onion, garlic, salt, and pepper in 6 cups of water --
skimming, then simmering for 2 hours. Remove the meat, chop fine, and
reserve. Strain the stock.
Bring the stock back to a boil. Crush the leaves between your hands into
the stock, reduce heat, and simmer for 20 minutes.
Meanwhile, crush the remaining garlic with some salt, then fry it in the
oil until it is golden. Stir in the coriander and cayenne. Set aside
until the leaves are cooked.
When ready to serve, return the meat to the pot, stir in the spices, and
let simmer for a few minutes. Ladle into bowls and serve immediately --
and pass the onions soaked in vinegar on the side.
Serve hot to 4 to 6 people, if they like it.
Comments: Portrayed in Pharonic tomb paintings and still the staple of the
Egyptian people, this soup is probably for curiosity seekers only.
Melokhia is a member of the mallow family, and it cooks up into something
pretty slimy that, to a non-cognoscenti, looks a lot like the dark green of
pond scum. Worse, what you thought would be the saving grace of the
cayenne only serves to give you a nasty bite in the back of the throat once
you get a mouthful down -- and you're left, dazed, with bad breath. As
you can tell, not my favorite. I was able to find the dried melokhia
leaves at a local market. Maybe I should have tried alternatives with
fresh spinach, chard, or beet greens mixed with parsley. Anyway, here it
is for you brave ones out there.

3 cups dry white wine (dry vermouth is goo
3 cups water or stock (chicken especially
1/3 cups almonds; ground

4 slices bread - (to 6); toasted to a
dry hardness (one for each person)
Soak the ground almonds in 1 cup wine.
Heat oil in a large saucepan, add onions, and cook over low heat for 20
minutes (onions will be golden and soft). Add remaining wine and water,
bring to a boil, cover pot, and let simmer for 20 minutes. Pour in almond
mixture, reboil, then turn down heat and simmer for 5 minutes.
When ready to serve, put a slice of toasted bread -- or "sop" -- in each
bowl, then ladle soup over. Serve immediately.
This recipe yields 4 to 6 servings.
Comments: NOT just a curiosity, but a terrific and filling onion soup.
Maybe Chaucer's cook in The Canterbury Tales made it when he "boiled the
chiknes with the marybones" -- but you too can make and serve it hot as a
wonderful and aromatic luncheon meal.

This is an excellent tasting soup. Easy to make and is nice and
creamy.

6 medium potatoes, peeled and cubed
1 small carrot, grated
1 small onion, chopped
1/2 cup chopped green pepper
2 tablespoons chopped seeded jalapeno pepper
3 cups water
2 tablespoons plus 2 teaspoons beef bouillon granules
2 cloves garlic, minced
1/8 teaspoon pepper
2 pounds ground beef
1/2 pound sliced fresh mushrooms
2 tablespoons butter
5 cups milk, divided
6 tablespoons all-purpose flour
1 package (16 ounces) process cheese (Velveeta), cubed
Crumbled cooked bacon
In a soup kettle, combine the first nine ingredients; bring to a boil.
Reduce heat; cover and simmer for 15-20 minutes or until potatoes are
tender. Meanwhile, in a large skillet, cook beef and mushrooms in butter
over medium heat until meat is no longer pink; drain. Add to soup. Stir in 4
cups milk; heat through. In a small bowl, combine flour and remaining milk
until smooth; gradually stir into soup. Bring to a boil; cook and stir for 2
minutes or until thickened. Reduce heat; stir in cheese until melted.
Garnish with bacon. Yield: 14 servings (about 3-1/2 quarts).

* In a large bowl, combine the salad greens, apple, almonds and cranberries. Drizzle with dressing; toss to coat. Serve immediately. Yield: 2 servings.

Ingredients
* 6 cups torn mixed salad greens
* 2 medium oranges, peeled and segmented
* 1 cup cherry tomatoes
* 1/2 cup chopped walnuts, toasted
* 1/4 medium red onion, thinly sliced
* 2 tablespoons orange juice
* 1 tablespoon white wine vinegar
* 1 teaspoon grated orange peel
* 1 teaspoon honey
* 1/2 teaspoon salt
* 1/4 teaspoon ground cumin
* 6 tablespoons walnut or Crisco® Extra Virgin Olive Oil, divided
* 1/3 cup pistachios
* 4-1/2 teaspoons seasoned bread crumbs
* 1 log (4 ounces) fresh goat cheese
Directions
* In a large bowl, combine the first five ingredients. In a small bowl, whisk the orange juice, vinegar, orange peel, honey, salt, cumin and 5 tablespoons walnut oil. Pour over salad; toss to coat. Divide among four serving plates.
* Place pistachios in a food processor; cover and process until ground. Transfer to a small bowl; stir in bread crumbs. Cut goat cheese into four slices; brush slices with remaining oil. Coat in crumb mixture.
* In a small nonstick skillet coated with cooking spray, cook cheese slices over medium heat for 1-2 minutes on each side or until golden brown. Place on salads. Yield: 4 servings.
