Slow Cooker Tuscan Beef Stew

Beef simmers slowly with tomatoes, red wine, cannellini beans and
Italian seasoning to make a mouthwatering, Mediterranean-inspired stew.

Serves: 8 servings (about 1 1/2 cups each)

1 can (10 3/4 ounces) Campbell's® Condensed Tomato Soup
1 can (10 1/2 ounces) Campbell's® Condensed Beef Broth
1/2 cup Burgundy wine or other dry red wine or water
1 teaspoon dried Italian seasoning, crushed
1/2 teaspoon garlic powder
1 can (14.5 ounces) diced tomatoes with Italian herbs
3 large carrots, cut into 1-inch pieces (about 2 cups)
2 pounds beef for stew, cut into 1-inch pieces
2 cans (about 15 ounces each) white kidney beans (cannellini), rinsed
and drained

Stir the soup, broth, wine, Italian seasoning, garlic powder, tomatoes,
carrots and beef in a 3 1/2-quart slow cooker.
Cover and cook on LOW for 8 to 9 hours* or until the beef is
fork-tender.
Stir in the beans. Increase the heat to HIGH. Cook for 10 minutes or
until the mixture is hot.
* Or on HIGH for 4 to 5 hours.

Ensalada de Papitas con Rajas

Potato and Poblano Rajas Salad

Serves : 6

Ingredients :

2 pounds baby red potatoes
3 poblano chiles, charred, sweated, peeled and cut into strips
1/2 cup olive oil
2 tablespoons sesame oil
1 1/2 cups halved and thinly sliced red onion
1 teaspoon dried tarragon
1/4 teaspoon ground allspice
1/4 cup sesame seeds
3 tablespoons white wine vinegar
1 tablespoon unseasoned rice vinegar
1/2 teaspoon kosher or coarse sea salt

To Prepare :

Bring a large pot of salted water to a rolling boil over medium-high heat.
Drop in the red potatoes and cook for about 20 minutes, until they are cooked through
and the tip of a knife goes in without much resistance, but the potatoes are not falling apart.
When ready, drain into a colander.
Once the potatoes are cool enough to handle, cut into halves.

In a large deep skillet or casserole dish, heat the olive oil over medium heat.
Once it is hot, add the sesame oil.
Stir in the red onion and cook for about 12 minutes, stirring once in a while, until they have completely softened and edges have begun to slightly brown.
Incorporate the poblano chile rajas (strips), stir, cook for a minute or two.

Add the tarragon, allspice and sesame seeds and cook for a couple minutes.
Pour in the white wine vinegar and rice vinegar, stir, cook for another minute and turn off the heat.

Place the potatoes in a large bowl, pour the onion, rajas, oil and vinegar mixture on top, and gently toss.
Serve warm, at room temperature (how I like them the best) or cold.

Spicy Corn Chowder with Chicken

4 slices of bacon
1 onion, diced
1 jalapeno, diced
1 poblano pepper, diced
1 red pepper, diced
4 cups corn (frozen or fresh)
4 small/medium potatoes, diced
1 Tbsp. fresh thyme (or 3/4 tsp. dried thyme)
3 cups vegetable or chicken broth
1 cup milk
1/2 cup heavy cream
salt and pepper to taste
2-3 cups cooked and diced or shredded chicken (I just seasoned a couple of chicken breasts with salt and pepper and sauteed in a bit of oil in a frying pan until cooked through)

Cut the bacon into strips and fry in a large dutch oven until crispy then set aside.
If you used turkey bacon like I did, you might need to add a little oil to the pan - if you use regular bacon, drain grease, reserving 1 Tbsp.
To the reserved fat, add the onion, jalapeno, poblano pepper, red pepper, and corn.
Cook for about 5 minutes.
Add in the thyme and season with salt and pepper.
Add in the potatoes and broth.
Bring to a boil and simmer for about 20 minutes, until the potatoes are tender.
Transfer half of the soup to a blender and puree.
Add back to the soup pot and add in the milk, heavy cream, and cooked chicken.
Let simmer for a few minutes.
Top each bowl with some crumbled bacon.

My Broccoli Califlower Carrot and Sausage soup !
 
Ingredients:
 
1 TBSP olive oil
1 TBSP Butter
 
1 Cup chopped onions
3 Garlic cloves, pressed or minced
1 bag of frozen broccoli, califlower, carrots mix , chopped into 1/2 " pieces
1 32 oz can Chicken Broth
1 tsp pepper
1 TBSP Brown Sugar
1 TBSP Apple cider vinegar
1 cup parmesian cheese or shredded cheddar cheese
1/2  cup Milk
 
Saute onions and chopped vegetables in olive oil and butter until softened.  Add chicken broth, pepper, garlic, apple cider vinegar and brown sugar.  Simmer 20-30 minutes.  Add in 1 cup parmesian cheese OR 1 cup shredded cheddar cheese, and the 1/2 cup of milk and heat through.  ** you will not taste vinegar or sugar, but the soup will have a very delicious  tastey tang to it that keeps you coming back for more . (The vinegar is balanced out with the sugar and really adds a lot to this soup - its my secret ingredient !.)

This pleasing pasta salad is like eating a BLT in a bowl. Chock-full
of crispy crumbled bacon, chopped tomato, celery and green onion, the
sensational salad is draped in a tangy mayonnaise and vinegar

TOTAL TIME: Prep: 20 min. + chilling
MAKES: 12 servings

Ingredients

2 cups uncooked elbow macaroni
5 green onions, finely chopped
1 large tomato, diced
1-1/4 cups diced celery
1-1/4 cups mayonnaise
5 teaspoon white vinegar
1/4 teaspoon salt
1/8 to 1/4 teaspoon pepper
1 pound sliced bacon, cooked and crumbled

Directions

Cook macaroni according to package directions; drain and rinse in
cold water. In a large bowl, combine the macaroni, green onions,
tomato and celery.
In a small bowl, whisk the mayonnaise, vinegar, salt and pepper.
Pour over macaroni mixture and toss to coat. Cover and refrigerate for
at least 2 hours. Just before serving, add bacon. Yield: 12 servings.

Nutritional Facts

3/4 cup equals 290 calories, 25 g fat (5 g saturated fat), 19 mg
cholesterol, 387 mg sodium, 11 g carbohydrate, 1 g fiber, 6 g protein.

husband loves BLT sandwiches, so this has become a favorite of his.
It's nice to serve on hot and humid days, which we frequently get

MAKES: 6 servings

Ingredients

1/2 cup mayonnaise
3 tablespoons chili sauce
2 tablespoons lemon juice
1 teaspoon sugar
3 cups cooked elbow macaroni
1/2 cup chopped seeded tomato
2 tablespoons chopped green onions
3 cups shredded lettuce
4 bacon strips, cooked and crumbled

Directions

In a large bowl, combine the first four ingredients. Add the
macaroni, tomatoes and onions; toss to coat. Cover and refrigerate.
Just before serving, add lettuce and bacon; toss to coat. Yield: 6
servings.

Nutritional Facts

1 serving (1 each) equals 259 calories, 17 g fat (3 g saturated fat),

MAKES: 5 servings
Ingredients

        1 pound ground beef
        2 cups frozen mixed vegetables
         1 can (14-1/2 ounces) diced tomatoes, undrained
         1 can (14-1/2 ounces) beef broth
         1/4 teaspoon pepper
         1/2 cup uncooked elbow macaroni


Directions

    In a large saucepan, cook beef over medium heat until no longer pink; drain. Stir in the mixed vegetables, tomatoes, broth and pepper. Bring to a boil; add macaroni. Reduce heat; cover and simmer for 8-10 minutes or until macaroni and vegetables are tender. Yield: 5 servings.



Nutritional Facts

1 cup (prepared with reduced-sodium broth) equals 233 calories, 8 g fat (4 g saturated fat), 46 mg cholesterol, 341 mg sodium, 19 g carbohydrate, 5 g fiber, 20 g protein. Diabetic Exchanges: 2 lean meat, 1 starch, 1 vegetable, 1/2 fat.

I love salads there no other way to say it. My hubby says I am part rabbit and I guess he is right at least sometimes.

I live in Kansas,USA. I moved from the state of Rhode Island and really enjoy the land and the openness of this country.
I am disabled and still enjoying life. I hope to earn new friends and share some great recipes. I think salad is a terrific and healthy and can be made so many different ways.

CLASSIC EGG SALAD

 4 Servings     


6 Eggs 2 teaspoons Dijon mustard
1/4 cup mayonnaise 2 teaspoons lemon juice
2 tablespoons red onion; minced 1/4 teaspoon salt
1 tablespoon fresh parsley leaves; minced Ground black pepper
1/2 stalk celery; chopped fine


1. Place eggs in medium saucepan, cover with 1 inch of water, and bring to boil over high heat. Remove pan from heat, cover, and let sit for 10 minutes. Meanwhile, fill a medium bowl with 1 quart water and 1 tray of ice cubes (or equivalent). Transfer eggs to ice water bath with slotted spoon; let sit 5 minutes, peel and dice medium.

2. Mix all ingredients together in medium bowl, including pepper to taste. Serve. (Can be covered and refrigerated overnight.)

Tomato Egg Salad

From: Recipe.com's "Chopped!" via "Better Homes and Gardens" (8/12/2013)

4 Servings     


6 eggs1 tablespoon dijon-style mustard
6 roma tomatoes1 bunch watercress; trimmed
1/3 of seedless cucumber; chopped1/2 teaspoon salt
1/4 of red onion; chopped1/2 teaspoon ground black pepper
1/3 cup mayonnaise


1. In a medium saucepan, cover the eggs with water. Bring to a boil over high heat. Remove the saucepan from the heat. Cover the saucepan & let the eggs stand for 12 minutes.

2. Drain, rinse, peel & chop the eggs.

3. Meanwhile, halve the tomatoes lengthwise & remove the seeds.

4. In a mixing bowl, combine the cucumber, onion, mayonnaise, mustard, salt & pepper. Fold in the chopped egg.

5. Divide the watercress among 4 serving plates. Top each evenly with 3 tomato halves & a spoon of egg salad. Drizzle each serving with any remaining dressing.
